1. Bhatt ki bhatwani
Bhatt pulse is of two colours white and black found in the Kumaon region of Uttarakhand. It is rich in protein, highly nutritious, It keeps our bones as well as heart healthy. It is delicious and the healthiest food.
Ingredients of Bhatt ki Bhatwani
- Bhatt pulse (also known as Pahadi beans)
- 1 bowl chopped onion
- 1 bowl chopped tomato
- red chilli powder
- coriander powder, seeds, leaves
- mustard oil
- salt
- turmeric powder
- cumin
- 1 bowl wheat flour
how to make bhatt ki bhatwani
Take a pan and put bhatt pulse into it, and roast it for 3-5 minutes.
After the roasting process, take the bhatt out of the pan.
Then take kadai, put 2 tablespoons mustard oil, 1 teaspoon cumin, coriander seeds, chopped onion, chopped tomato, turmeric powder, salt, or you may add additional spices according to your taste, and then add some wheat flour in it and mix it well. After that, put the roasted pulse in it and add 2-3 glasses of water and boil it properly. Garnish it with coriander leaves.
Now, Bhatt ki Bhatwani is ready to eat.
2. Jhangore ki kheer
Jhangora or Barnyard Millet is found in Himalayan valleys of Uttrakhand. Jhangora is very healthy as it is rich in fiber, Protein, Iron, Calcium and its kheer becomes more healthy.

- milk
- cardamom powder
- sugar/jaggery

how to make jhangore ki kheer
Take half bowl of jhangora, wash it and put it in water and soak the jhangora for 5 to10 minutes. Then take it in a pan, put 1 liter of milk in it, boil it, after boiling add soaked jhangora, then add cardamom powder and mix well, cook on low heat for 1/2 -1 hour. Cook for 10-15 minutes by stirring. Now garnish with dry fruits and enjoy the delicious food.
3. Swale
Gahat is the base of cooking; swale’s filling is gahat ki dal produced in Garhwal and Kumaon hills in Uttarakhand. Gahat ki daal is healthy. It has many benefits because it contains fiber, protein, iron and can also help to control diabetes, reduce the risk of heart disease etc.

To make this, first prepare the dough with flour, water, salt and a pinch of turmeric. Then, the gahat ki dal are boiled and mashed with ginger-garlic paste, green chillies, coriander leaves and spices like turmeric, cumin powder, red chilli powder. Roll the dough into small circles, spoon in a generous amount of the mashed gahat ki dal mixture, seal and fry until golden brown and puffy. Now, Crispy and soft swale is ready to eat. Pair it with some tangy pickles or creamy yogurt for a meal that will delight your taste buds.
4. Mandua ki roti
Mandua, popularly known as finger millet, grows in the mountains of Uttarakhand. Mandua (finger millet) is a food rich in protein, minerals, calcium and vitamins. It is also rich in iron and manganese. It is easy to digest, prevents anaemia, and controls blood sugar.

- Mandua ka atta (finger millet flour)

how to make mandua ki roti
mandua ki rotis are super easy to make, all you need is whole mandua ka atta, water and a pinch of salt. Start by mixing the flour and salt in a bowl, then gradually add the water until the dough comes together.
Knead the dough for a few minutes until smooth, then let it rest for few minutes, once rested, divide the dough into small pieces and roll into thin circles. Heat a flat pan over medium-high heat and cook the the roti, for 1-2 minutes on each side, or until the it gets slightly puffy and brown spots are visible. Put some butter over it and serve hot alongside your favourite vegetable.
5. Phanu
Phanu can be made from legumes like chickpeas (chana), mung bean or green gram (moong dal) and horse gram (gahat). But here we will see how to prepare gahat ka phanu. Since the process is the same for other pulses you can prepare it according to your preference. Since we know that it can be made from pulses, it is sure to provide you with protein.

- 1 Bowl gahat dal (soaked)
- salt
- cumin
- turmeric powder
- mustard oil
- wild mustard (Jakhya)
- asafoetida (hing)
- dry red chilli
- garlic
- coriander powder
how to make phanu
First step take gahat ki dal and grind it, then take iron kadai, add 2 tbsp mustard oil and then add cumin, dry red chilli, wild musturd, asfoedita, garlic. Then add grinded gahat to it. Add 1/2 tsp turmeric powder, 1 tsp coriander powder, salt and red chilli- powder (as per taste) and then add 1 cup water. Mix evenly and cook for 1 hour, delicious Phanu is ready.To make it more delicious you can also add fritters(pakoras) of grinded gahat. Garnish with coriander leaves and serve it with rice.
