1.MANDUA KI ROTI –
Mandua is a type of grain grown in the mountains of Uttarakhand. Mandua roti is considered good for digestive problems and mandua roti is good healthy food for human body. In Garhwal and Kumaon, this roti is an important part of the diet during cold days. Mandua helps in keeping the body warm. “Mandua Roti” makes your food more healthy with highly nutritious which is a very good source of Calcium, Protein, Iron. 2.CHAINSOO-
Chainsoo is very popular uttrakhand’s pahadi food and its very healthy and delicious food . Chainsu is made from Black Daal(udad).udad Daal is hard to digest and hence, this recipe requires the Daal to be deep fried without oil. Daal is ground and mixed with asafoetida, black pepper, cumin, turmeric and other spices and boiled in water. Its good source of vitamins and protein and its very delicious food .
3.KANDALI KA SAAG-
Kandali saag is healthy food of uttarakhand ,its good source of iron,aslite colite,vitamins.Its consumption is beneficial in jaundice, stomach diseases, cough and cold. Consumption of Kandali is also advised in kidney related diseases.
). RECIPE-
First of all, boil Kandali in a vessel in the same way as you boil spinach. Grind this boiled kandali with a mortar or grind it finely in a mixer. Add a little coriander powder to this Kandali solution and mix well.Heat oil/ghee on the pan, when the oil is hot, first fry the red chillies as required and take them out separately and now for tempering, add jakhaya, asafoetida and immediately add the kandali solution. Now add salt as per requirement. And keep stirring or rotating it well with a ladle so that it does not stick to the back of the pan. The water should be of proper consistency, neither too thin nor too thick. Cook well and Kapali is ready.its very delicious food of uttrakhand. Ghee adds more flavor while serving.
4.BHANG KI CHATNEY-
Unique to healthy food of Uttarakhand, the main ingredient of Bhang chutney is hemp seeds. These seeds are then mixed with lemon, dried red chilli and cumin to create a delicious balance of salty spices. Chutney, made daily in almost every Garhwali, Kumaoni home, is the star of any main dish. Since the seeds are used to make this recipe, there are no psychoactive components as they are present in the buds and leaves of the plant, not the seeds.Seeds is good source of omega-3 and omega-6,fiber.
