Instructions:

  • Prepare Sweet Potatoes:
    • Peel and grate the sweet potatoes using a fine grater.
  • Cook Sweet Potatoes:
    • Heat ghee in a pan.
    • Add grated sweet potatoes and sauté on low-medium heat until they are cooked and tender.
  • Add Milk:
    • Pour in the milk and continue cooking the sweet potatoes in milk until it thickens.
  • Add Sugar:
    • Add sugar/jaggery and mix well. Stir continuously to avoid lumps.
  • Flavoring:
    • Add cardamom powder and saffron strands (if using). Mix thoroughly.
  • Add Nuts:
    • In a separate pan, roast the chopped nuts in ghee until they turn golden brown.
  • Combine:
    • Add the roasted nuts to the sweet potato mixture and mix well.
  • Cook Until Thick:
    • Keep stirring and cooking until the halwa reaches a thick, halwa-like consistency and ghee starts to separate from the mixture.
  • Garnish:
    • Garnish with additional nuts and raisins if desired.
  • Serve:
    • Serve warm and enjoy your delicious sweet potato halwa!

Ingredients:

  • Sesame seeds 1 cup white  (100 g)
  • Jaggery ½ cup (60g)
  • Clarified butter/ ghee 2 tsp (use cashew butter for vegan preparation)
  • 6-8 green cardamoms powdered
  • 10-12 pistachios powdered

Instructions:

  • Sesame seeds should be dry-roasted over medium-high heat until aromatic. About two to three minutes. You’ll hear them crackling and the color will somewhat darken. Set aside.. Keep aside.
  • In the same pan, heat jaggery and ghee until it melts completely. Takes about 3-4 mins.
  • Remove from heat.
  • To the melted jaggery and ghee, add the toasted sesame seeds, pistachio powder, and cardamom powder. Mix well. It will take some work to mix well and cool the mixture because it will be very sticky.
  • Rub a little ghee/oil on your palms. Take a small amount of the sesame and jaggery mix and shape into small bite size balls. Repeat till all the mixture is over.
  • Store in a cool dry place. The til-gud laddus stay well for up to a month.
